Lemon-Raspberry Energy Bites
I’m a big fan of energy bites because they are easy to throw together and you don’t have to turn on the oven. Seeing as how Missouri has decided to skip spring and go straight into summer, I was 100% fine with not turning on the oven today!
My friends over at Manitoba Milling Co. sent me a bag of their milled flaxseed to try out and I have to say, I’m in love with how smooth the texture is compared to other milled flax seed I’ve tried. It has mixed in beautifully to my yogurt, smoothies, and oats. I like to incorporate milled flax as it is fiber rich and high in plant-based omega-3s. I’m always looking for little tweaks I can make to increase the nutrient density of my meals because it makes my body feel good and my digestive tract thanks me.
Since I had plenty of milled flax laying around, I added it to these energy bites because not only does it help boost the nutrient profile, but it also helps them to stick together as it acts as a flour-like binder with the wet ingredients. I normally enjoy chocolate chips in my energy bites but unfortunately, didn’t have any stocked in the pantry! I decided to be adventurous instead and use up some other ingredients I had on hand. Lemon and raspberries seemed like a yummy combination and fitting for the summer like vibes we’ve got going on as of late.
If you don’t have a food processor, I think this recipe would turn out fine without, however, you may want to chop up the raspberries first before mixing them in. I utilized the processor to help break down the oats into a finer texture and added some almond flour I had from another recipe that really needed to be used up (yay, no food waste)! Feel free to experiment with adding in more oats, a tad more honey if you like a sweeter taste or even using maple syrup. You want to store these in the fridge or freezer to help them last longer and to maintain their texture.

LEMON-RASPBERRY ENERGY BITES
Prep Time: 15 minutes
Makes 9-10 bites/balls
- 1 cup oats
- 2/3 cup almond flour
- 1/3 cup milled flax
- 1/3 cup honey
- 1/3 cup rasbperries
- 1 tbsp lemon + zest of lemon
- 1 /2 tsp vanilla
- a few dashes of cinnamon
- a few dashes of salt
Process oats, almond flour, and milled flax in a food processor until oats are broken down into a flour like consistency.
Add remaining ingredients, except for raspberries, and pulse in food processor until a dough is formed.
Add raspberries and pulse a few times to combine.
Roll into 1 to 1-1/2" balls. Place in a container and cover with lid. Place in fridge or freezer to set up for about 1 hour.
Will keep stored in fridge for up to 1 week, in freezer up to 2-3 months.
